Matsuoka Brewery in Ogawa-machi, Saitama Prefecture, uses 100% Koshihikari rice grown in naturally occurring soil without using any pesticides or chemical fertilizers, brews it in small quantities and at low temperature fermentation to bring out the refined ginjo aroma and flavor of the rice, and then ages it in Ichiro's malt whiskey barrels brewed by Venture Whiskey in Chichibu, Saitama Prefecture. This sake is matured for two months in Ichiro's Malt whiskey barrels brewed by Venture Whiskey in Chichibu, Saitama Prefecture. It has a firm aftertaste and umami profile, and invites you to discover new charms that transcend the concept of sake.

Shimozato Unfiltered Junmai Ginjo Aged 2 months in Whiskey Barrel

Ingredients: Rice (domestic), Rice malt (domestic)

Ingredient Rice: 100% Koshihikari (produced in Saitama Prefecture), no pesticides or chemical fertilizers used

Rice polishing ratio: 60%

Alcohol content: 16%.

Brewer's name : Matsuoka Jozo (Ogawa-machi, Hiki-gun, Saitama)

📒Tasting Note

Appearance: Pale yellow gold shining, young aged and lightly textured.

Aroma: Fruity aromas of dark cherries and plums, with a sweet scent of chocolate cake.

Taste: on the palate, sweet and sour nuances of ripe dark cherries and plums, with a chocolate cake bitterness on the finish, followed pleasantly by a whisky-like aftertaste.
